Range of ‘made in Fiji’ cheese for cheese lovers

CHEESE lovers can now purchase a range of products offered by Pacific Harbour-based Gourmet Cheese Fiji.

Headed by Heather Crossingham, the company makes cheese from locally-sourced products.

Ms Crossingham said this included soft cheeses like ricotta, creamy brie, double cream brie, blue vein, stilton blue, and camembert.

“We’re hoping in the next month or so to have fresh buffalo mozzarella,” she said.

“We’re based in Pacific Harbour, and in Fiji this is the first time anyone has done a ‘made in Fiji’ cheese. We started in November last year.

“I did training overseas and brought it over here just because we wanted to see this happen.”

Supply has already begun to grocery stores and the company is also in talks with tourist properties.

“It’s just a matter of being able to produce enough,” she said.

“It does take time, each cheese can take about a month to produce, and age and some cheeses take up to six months so we’re starting with the soft, fresh cheeses and then we’ll go from there.”
