GOOD news for lovers of Italian cuisine.

Radisson Blu Resort Fiji has opened a signature family friendly restaurant Basilico, which specialises in Italian dishes.

Resort general manager Charles Homsy said they recognised Italian cuisine was one of the best in the world.

“We wanted to bring something more to our guests and the area we did it internally and we are proud that most of our ingredients are done fresh,” he said.

According to resort director of food and beverage Denny Akira, the concept was received positively by guests.

“I think it’s going in the right track and I am looking forward to developing the restaurant even more,” he said.

He said handmade pastas made by the team would be one of the restaurant’s unique selling points. Executive chef Andreas Reinhardt highlighted the Basilico menu used local and fresh ingredients that were unique to Fiji.

These include fresh local seafood and vegetables and local chocolate for desserts.

They are then prepared with imported cheesed, cured meats and homemade pasta.

“Italian cuisine suits this climate perfectly with its fresh, light and simple approach to food,” he said.

“The array of local produce goes very well in Italian recipes, which is a light cuisine with lots of flavours.”
