Food that benefits their physical health

THROUGHOUT her childhood, Kolora Momoedonu said her parents had always encouraged healthy living, emphasised on a healthy diet and always bought food that would benefit their physical health.

"Healthy shopping has been significant to me, ever since," said Ms Momoedonu.

"I usually take my mother because she knows what is needed best and ways to buy more with a certain budget. So shopping with my mother becomes a learning experience because she's amazing with sticking to the budget and I could learn a few tips from her. My mother is my backbone, strength, inspiration and motivation."

She says healthy shopping is an important practice and beneficial to one's mind and body.

"I love my body and I love to take very good care of it," she said.

"With that reason, healthy shopping is very important and if you're on a budget, make a list in order of most important item, before you shop. That way, you won't waste time figuring out what you should buy. Having a list enables you to buy exactly what you need and avoid shopping for unnecessary items. Maintaining a healthy lifestyle is very important. Every day, I make an effort to do a few workouts before breakfast, eat healthy when I can, drink a lot of water, get enough sleep, get inspired and not overthinking about little things."

Below are her steps to making her all-time favourite, kokoda:

Steps

* Slice fish (preferably wahoo) into small edible cubes.

* Soak the sliced cubes into vinegar and lemon until the meat is white and then rinse with water, squeeze and dry;

* Add lemon with the dried cubes of fish meat;

* Rinse and squeeze the meat;

* Put it in a basin.

* Scrape the coconut, add coconut milk (shouldn't be mixed with water) into the basin of fish cubes;

* Mix it thoroughly and add salt and spring onions. Serve and enjoy!

Ms Momoedonu an undergraduate student at the University of the South Pacific and will compete in the adult category of the World Supermodel South Pacific regional final.

The event will take place in April at the Pearl Resort in Pacific Harbour.
