KITCHENS in restaurants and eateries in Labasa will be strictly monitored by the Labasa Town Council health inspectors.
Council's assistant health inspector Newal Naidu said they would look out for unhygienic kitchens.
"Food handling is essential and processes involved in food preparation must be clean and hygienic at all times," he said.
"We are encouraging restaurant owners to have ceramic tilings, which can be easily cleaned.
"Grime and grease normally collect on walls, ceilings and floors of restaurants and it is often tough to remove them."
Mr Naidu said sometimes, operators were lazy to remove the grease stains.
"However, this time we will be looking out for these downfalls and will be awarding grades to restaurants during our inspection."
