Fiji hotels should push for local seafood: Chef Healey

KOKOMO Private Island Resort executive chef Anthony Healy says seafood in Fiji is amazing and every hotel in Fiji should be pushing local seafood.
He made the comments while speaking to this newspaper after his presentation on ‘Dock to Dish’ to the students of the Pacific Fusion Restaurant at the University of the South Pacific in Suva.
“For me, if you go on holiday, you should eat produce from that area, from that island and from that local economy,” Healy said.
He said the resort gave around 80 to 90 per cent of the local food to its guests.
“At least 80 to 90 per cent local food is given to guests and we still have to buy beef and some stuff that we buy out of Australia,” he said.
